I come up with all sorts of excuses for eating poorly during busy weeks! For me, it's usually some of the following: I have no time!!!, I don't even know how to cook!!, What do I eat! And many more... Sounds familiar :) ?
I still fall back into those excuses from time to time and I think it's OKAY. At the end of the day, it's all about balance and having a healthy relationship with food. Setting realistic goals for the week and giving myself the flexibility to eat out at weekends have really helped me establish healthy eating habits.
I've also come up with some very simple and practical tips to get myself to try and cook at home at least 4-5 days a week! So, here are the 3 tips that hopefully will help you in your goals too. :)
Cook once, eat twice.
Cook once, eat twice. Life saver! If you are intimated by the whole "meal prep" Sundays, or the idea of eating the same thing for the next 5 days, welcome to the club! :) I am totally with you on that. So, try this: cook only enough to eat 2 days or the next two meals. So, what I do is basically cook enough rice to eat later for at least one lunch + one dinner (or even 2 lunches + 1 dinner.) + I love using a rice cooker and even cook quinoa in that!
For the love of frozen!
I'm talking about organic Veggie burgers, frozen veggies, and fruits. If you stock up on these, you'll never run out of ideas to cook a healthy meal during the week. I make quick and healthy sandwiches with vegetarian burger patties at least twice a week. PRO TIP: I also LOVE using adding one veggie burger patty to my Spaghetti dishes as pictured above. The veggie burger patty is cut into little pieces and hidden under all those greens :) ! It's just so yummy, adds texture and also boosts the nutritional value of any dish. Next time, give this idea a try!
"If you keep healthy food in your fridge, you eat healthy food!" I always keep reminding myself: I am on the same team with "want to eat healthy" self! If you want to be healthy, make things EASIER for yourself. Stock up on the good food, so you can eat the good food✨ Mark your calendar to pay a visit to your grocery store and the farmer's market. Fill your basket with all the fresh goodies.
